Chicken Burrito Salad Bowl

This recipe is a great way to enjoy the flavors of a burrito without the high-carb tortilla. It's packed with protein and fiber, making it a filling and nutritious meal for those who have undergone weight loss surgery.


  • 1 lb. boneless skinless chicken breasts
  • 1 package taco seasoning (you will use about 2/3 of the package)
  • 1 large head of romaine, rinsed and torn
  • 2-3 Roma tomatoes cut into wedges
  • 1-2 tbsp. cilantro, chopped (amount is per your preference)
  • 1/2 cup plain fat-free Greek yogurt (amount is per your preference)


  1. Pat chicken dry with a paper towel and sprinkle taco seasoning generously over both sides of the chicken breasts. Preheat oven to 375F and place chicken in a baking dish. Cook for 25 minutes or until internal temp reads 165F.
  2. While chicken is cooking, rinse and tear apart romaine lettuce. Cut tomatoes into wedges and chop cilantro. Sprinkle these ingredients on your dinner plates or one large salad bowl.
  3. Once chicken is cooked, let cool and chop. Add to salad mixture. Add fat-free plain Greek yogurt.
