Turkey Sausage & Bell Pepper Egg Cups

These egg cups are a high-protein, low-carb breakfast option that are perfect for those following a post-bariatric surgery diet. They're easy to make and can be prepared ahead of time for a quick and easy breakfast throughout the week.


  • ½ lb. turkey sausage crumbles
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 12 eggs
  • ½ cup cottage cheese
  • ½ cup 2% cheddar cheese


  1. Preheat oven to 350F.
  2. Whisk eggs together. Stir in cottage cheese. Add bell peppers, turkey sausage and cheddar cheese.
  3. Spray a muffin pan generously with cooking spray. Pour in egg mixture- about 3/4th of the way full.
  4. Bake for 30 minutes. Remove from muffin pan immediately, then allow to cool 3-4 minutes before serving.

**Reheat great! Make plenty and reheat for breakfast throughout the week.
